So after a couple months of going back n’ forth on pellet smokers I finally pulled the trigger on a 2nd gen Weber SmokeFire EX 6. I found and joined forums on every pellet smoker I was considering. I know the first gen smokefire had many issues but from everything I’ve been told on the forums the issues were corrected on the 2nd gen. That along with hearing how Weber stood by their customers who bought the first gen and sent them all of the upgraded parts that are on the 2nd gen free of charge, and even covered the shipping persuaded me to go with a Weber. I went to my local ACE Hardware to pick one up last weekend. The only one they had in stock was the floor display. I thought why not, it would save me an hour or two for assembly. After looking it over a bit I noticed there was a chip and a scratch in the porcelain on the panel around where the ash/grease tray slides out. I mentioned it to the clerk and he said, he’d get the manager to see if he could do anything about it. So the manager comes out, looks at it and says: “He could order me a new panel or he’d give me $200 off the price of the grill” which would be what they pay for it. I jumped on the $200 off. Hell I can dab some paint on it. I’m loving this thing so far! Did mainly short cooks till last night. I started a brisket about midnight . This thing has been rock solid all night, temp hasn’t fluctuated 1° either direction! I’ll be wrapping it shortly. I’m 12 hours in and it’s @162° now.

The Weber was on my list of pellet smokers but after all the problems they were having I decided on the Camp Chef. Keep us posted as to how the long term operation and reliability goes for you. Wish you the best of luck on your purchase. You practically stole it. Also the wrap with foil or butcher paper makes a difference on the bark. But you probably know that. Rock on bro. Nothing like some yummy brisket. Brisket sandwich, brisket pizza, brisket chili, brisket Philly cheese steaks. YUM!!!

I was ready to buy the Camp Chef but for whatever reason they’re on back order.

My good looking Boss says its a go on the smoker. Cant figure out what took me so long because I will crush real good bbq. Will tear up my man-card and admit it will be the wife who kicks the ass on the bbq. Just a fact, she catches things fast regarding cooking. Going to re-read this thread several times cuz from the pics, you guys could shut me up for a couple hours real quick. Brisket? Well, yes sir, thank you, is there more?

It turned out great! I barely had enough left to make a couple sandwiches for my lunch today. My daughter and her crew were over along with two of my cousins and their wives. I had burgers and dogs also but everyone kept going back for more brisket

I don't mind that hard work stuff at all Anyway would the lack of fat make game birds tough to smoke? A friend brought a smoked hind quarter to a party we have every spring and early fall, so I know venison is a go.

A friend brought a smoked hind quarter to a party we have every spring and early fall, so I know venison is a go. I have limited experience with smoking game not counting the pheasant/car meetings . I have done a couple of geese and I tried brining one but not the other. The brined bird did come out better. Game meat is generally lean as you know and again may take some experimental time to find what works for your particular game species and smoker. Maybe join a chat board that is strictly for smoking. Others may chime in here to give their advice. www.bbq-brethren.com/forum/amazingribs.com/tested-recipes/other-fun-food-recipes/smoked-venison-ribs-coffee-dry-rub-recipe

No they are not my cooking escapades, I'm afraid if I tried it wouldn't be vary appetizing. They are just pictures of somebody else's cooking. But then after all the title of this thread is cooking pictures, so thought I would just add too it.
