How is a vertical smoker a reverse flow? It's in the design. I'll post a video here later. But if Malcolm Reed says is good with it. I'll trust him.

First time smoker...I bought a Treager last week, first thing I smoked was a 5lb or so beef brisket and it didn’t quite turn out like I wanted. I started 5:30am, got tired of waiting at 7 pm @190*, tasted great just not tender as I’ve had before. Next time I’ll try overnight I think.

How is a vertical smoker a reverse flow? Here is a quick description. pretty small for the price, i know how much they claim to fit in there, but it wouldnt cook very well IMO being that crammed in. They do look like a quality built unit though. I dont think all that smoke routing it really that big of a deal in a water smoker, the reason for reverse flow in a horizontal cooker is for even heat and smoke distribution, but the water pan and chimney location in a vertical cooker can accomplish the same thing.

I watched a video recently with a guy named Kosmo. He sells rubs and sauces and has competed on the pro bbq circuit. Anyways he was walking around during a Memphis in May event talking to many bbq familiar faces and from the looks of their equipment there are quite a few folks using these cookers for their butts and ribs. They do make like 6-8 different sizes and most I saw were not that big so maybe they do well enough even though smaller to get decent results. Maybe once I get my shop built I'll get one just cuz.

I've got to put together my latest which I just started on this afternoon. The Masterbuilt 1050. I smoked a few brats for supper last night that were darned tasty on my pellet smoker. Now that it's warming up a bit it will be full tilt smoking and grilling season.

I've got to put together my latest which I just started on this afternoon. The Masterbuilt 1050. I smoked a few brats for supper last night that were darned tasty on my pellet smoker. Now that it's warming up a bit it will be full tilt smoking and grilling season. I dont know that it it much smaller than the chubby. I know they all talk about how much you can fit in them, but crowding a smoker is never a good plan. either one of those to me would be 1 brisket, 2 butts, or maybe 4 racks at the most if you used a rib rack. I am more than happy with my drums for my charcoal cooking, if I were to go to something different it would likely be a gravity fed vertical unit.

You could consider doing an injection spaced about 1" apart with a injection mix. You should have also gone to an internal temperature of 202 to 207 and when it is toothpick or probe tender you're there. Let it steam off for 10 minutes or so then wrap and keep in a cooler for an hour. I'll put something up here in a bit for instructions.
