I dont know where you guys get your brisket, but around here in upstate NY, it is almost impossible to find a full packer. Just the flats. We do have a local butcher, but I'm afraid to ask the price as just a flat 9 lb will run almost $70 bucks. Hard to believe for basically shoe leather cut of meat. I may start using these. Only do 2-3 a year may as well use good beef.

savannahskol , I get what you’re saying about Prime Rib and the better cuts of beef being pricy.... I do two less expensive options on my ceramic Kamado’s several times a year. 1) Whole beef tenderloin. Tastes damn near as good as Prime Rib for less money,and its shape works out great if you’re trying to satisfy different preferences of doneness. I like it a little on the rare side... so I take it off the smoker when the temp in the thick end reaches 135 degrees and it leaves a graduated level of doneness down to medium well at the thin end of the loin. You may prefer this one since you like to grill NY strips. 2) Strip Loin Roast. I usally pick them up at Sams club,unless my local butcher puts them on sale. I did one at Christmas and it was a big time hit! Everyone thought it was a prime rib! Don’t think I’ll ever spend the extra money on a prime rib after the way the strip loin turned out! If you like the typical peppery crust on prime rib a heavy rub down with Montreal Steak Seasoning works well on both. I decided to change things up on the last strip loin I did and used my brisket rub on it. It was out of this world!!! 5 tablespoons paprika 3 tablespoons Kosher salt 2 tablespoons granulated garlic 2 tablespoons garlic powder 2 tablespoons minced onions 2 tablespoons onion powder 1 tablespoon black pepper (I grind pepper corn with the pepper mill) 1 tablespoon dried parsley 2 teaspoons cayenne pepper 2 teaspoons ground cumin 1 teaspoon dried oregano 1/4 teaspoon. Hot chili powder If this tastes a little too hot to your liking I’ve added up to a tablespoon of sugar to calm it down for some folks. This is a beef tenderloin I fixed awhile back to give an idea of the level of doneness throughout the loin.

I just did a 17.5 lb brisket this weekend on my pellet smoker, I got a little distracted and cooked it a little to fast due to a late start and the size so it was a little on the dry side but still won rave reviews. We took the balance and shredded it and put it in a pressure cooker for 20 minutes to moisten it and break it up for sandwiches later. Damn after that it was phenomenal-melt in your mouth good! I used a fairly mild combo of Hickory, Pecan, Chery wood. Next time I'm going to go a little more bold hardwoods. Any ideas or suggestions on that? My guess would be that the Brisket wasn't done is why it turned out dry. Brisket to check to see if it is done,you want to probe in the thickest part of the flat. If it probes like butter it is done. If there is resistance it not done. When the brisket is pulled...and let sit uncovered on a table for 10 mins. Then wrap and rest in a cooler for about an hour. I have pretty extensive experience on an big offset smoker. I would be happy to answer any questions if I can.

Try Tri-Tip sirloin steaks if you can find them. Usually around 6-7 a pound and great cuts. Like a cross between a filet and ny strip
Also buy whole ribeye and cut yourself. Cheaper that way

I was at Costco looking at this nice combo unit pellet smoker they got in last spring(Louisiana Grills- Champion). I hadn't ever really looked into pellet grills, and the research showed it was a super good value ($899, if I remember right). However, I couldn't find much about that specific model. Well, I was at Quetopia in Eden Prairie and they showed me the Yoder and I fell in love. She's a sturdy beast.
